Heat a generous dollop of coconut oil in a frying pan. Empty packet blend into a large mixing bowl. Whisk 2 eggs in a bowl and add 200ml of your chosen milk.(If you like a slightly wetter mix add 250ml).
Add the wet ingredients to the dry and mix well.Use a ladle to pour your perfect pancake-sized portions into the hot pan. Cook till golden, then flip. Remove when golden on both sides.
